Bacon-Wrapped Pork Rolls with Egg Omelette and Pickles

Step 1: Prepare the Pork Rolls

  1. Cut and tenderize the meat:
    • Cut the pork loin into 8 steaks, each about 1 cm thick.
    • Cover each steak with cling film and pound it with a meat mallet until as thin as possible.
    • Season both sides of the meat with salt and black pepper.
  2. Marinate the meat:
    • Place the meat chops in a deep bowl.
    • Add 2 tablespoons olive oil2 tablespoons Worcestershire sauce, and 1 tablespoon Italian seasoning.
    • Mix well to ensure all pieces are evenly coated. Let the meat marinate while you prepare the filling.

Step 2: Prepare the Egg Omelette

  1. Make the omelette:
    • In a bowl, whisk 2 eggs with saltblack pepper, and 1 teaspoon lemon juice until well combined.
    • Heat a small piece of butter in a frying pan over medium heat.
    • Pour the egg mixture into the pan, spreading it evenly.
    • Cook the omelette for 2 minutes on each side until set.
    • Cut the omelette into 8 strips, equal to the number of meat chops.

Step 3: Assemble the Pork Rolls

  1. Prepare the filling:
    • Cut the pickles in half or into quarters, depending on their size.
  2. Assemble the rolls:
    • Place one strip of omelette and one piece of pickle on top of each meat chop.
    • Roll up each piece of meat tightly around the filling. Repeat with all pieces of meat.
  3. Wrap with bacon:
    • Line a baking dish with parchment paper.
    • For each roll, wrap 2 strips of bacon around the pork roll, covering it completely.

Step 4: Bake the Pork Rolls

  1. Bake:
    • Preheat the oven to 180°C (356°F).
    • Place the bacon-wrapped rolls in the prepared baking dish.
    • Bake in the preheated oven for 30 minutes.
  2. Prepare the glaze:
    • In a bowl, combine 2 tablespoons vegetable oil1 teaspoon soy sauce, and 1/2 teaspoon sweet chili sauceMix well.
  3. Glaze and finish baking:
    • Remove the rolls from the oven and brush them with the prepared glaze.
    • Return the rolls to the oven and bake for an additional 5 minutes until the bacon is crispy and browned.

Step 5: Serve

  • Remove from the oven and let the rolls cool slightly before serving.
