Caramel Birthday Cake Roll
In a large bowl, beat eggs, granulated sugar and vanilla extract until light and fluffy.
In another bowl, sift together the flour, baking powder and salt. Gently fold the dry ingredients into the egg mixture.
Pour the batter into the prepared pan and spread it evenly.
Bake for 10-12 minutes or until cake springs back when touched.
While the cake is still warm, dust it with icing sugar and turn it out onto a clean kitchen towel.
Carefully roll the cake in the towel, starting with the short side, and let it cool completely.
Unroll the cake and spread a layer of whipped cream, then add a drizzle of caramel sauce.
Roll the cake up again without the towel, then place it on a serving platter, seam side down.
Add a little more caramel sauce on top and refrigerate for at least an hour before slicing and serving.
