Creamy delight of cottage cheese, nuts and fruit!
Directions:
Prepare the gelatin: In a small bowl,
mix 25g of gelatin with 70ml of cold water. Let sit for 5 to 10 minutes to swell.
Make a creamy base:
Put 350g of cottage cheese, 150g of sour cream and 2 tablespoons of honey in a blender. Blend until smooth.

Prepare the dried fruit:
Chop 80g dried apricots, 100g dates and 80g dried cranberries into small pieces.
Mix the chopped fruit together and simmer in a small saucepan until slightly soft.
Prepare the nuts:
Roughly chop 100g walnuts and 100g hazelnuts.
Mix the chopped nuts with the dried fruit mixture in a large mixing bowl.
Mix everything together:
Add the creamy cottage cheese mixture to the bowl with the nuts and dried fruit. Mix well.
Melt the gelatine:
Gently melt the swollen gelatine over a low heat or in the microwave. Do not boil.
