Crème Brûlée Doughnuts
In a small bowl, dissolve yeast and sugar in warm milk and let it sit for 5 minutes until it becomes foamy.
In a large mixing bowl, combine flour and salt. Add in the yeast mixture, eggs, butter, and vanilla extract. Mix everything together until a soft dough forms.
Knead the dough on a lightly floured surface for about 5–7 minutes, or until smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise for about 1 hour or until it doubles in size.
Make the Crème Brûlée Filling:
In a saucepan, combine heavy cream and milk. Split the vanilla bean and scrape the seeds into the pan (or add vanilla extract). Heat over medium heat until just before boiling.
In a separate bowl, whisk the egg yolks, sugar, and cornstarch until smooth.
Gradually pour the hot cream mixture into the egg yolks while whisking constantly to temper the eggs. Return the mixture to the saucepan and cook over low heat, whisking constantly, until thickened.
Remove from heat and let the custard cool. Once cooled, transfer it to a piping bag and refrigerate.
Shape and Fry the Doughnuts:
Punch down the risen dough and turn it onto a floured surface. Roll out to about ½ inch thickness and cut into rounds using a doughnut cutter.
Heat vegetable oil in a deep pan to 350°F (175°C). Carefully drop the doughnuts into the hot oil, frying a few at a time for about 2-3 minutes on each side, until golden brown.
Use a slotted spoon to remove the doughnuts and place them on paper towels to drain.
Stuff the Doughnuts:
Once the doughnuts have cooled slightly, use a piping bag to inject the crème brûlée custard into the center of each doughnut.
Caramelize the Sugar:
Sprinkle a thin layer of sugar over the top of each doughnut. Using a kitchen torch, gently caramelize the sugar until it forms a crispy, golden crust.
Serve and Enjoy:
Let the doughnuts cool for a few minutes to allow the sugar to harden, then serve and enjoy this decadent twist on a classic dessert!

With a crispy caramelized topping, a rich crème brûlée filling, and that signature doughnut texture, they’ll definitely become a favorite in your dessert arsenal.
