Mint Chocolate Oreo Drip Cake

1. Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
2. In a large bowl, mix together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
3. Add eggs, buttermilk, oil, and vanilla extract to the dry ingredients and mix until well combined.
4. Stir in the boiling water until the batter is smooth.
5. Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
6. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
7. Crush some mint chocolate Oreo cookies and set aside.
8. In a saucepan, heat the heavy cream until it just begins to boil. Remove from heat and stir in the chocolate chips until smooth. Add a few drops of green food coloring.
9. Place one cake layer on a serving plate and spread a layer of chocolate ganache on top. Sprinkle crushed Oreo cookies over the ganache.
10. Place the second cake layer on top and pour the remaining ganache over the cake, allowing it to drip down the sides.
11. Decorate the top with more crushed Oreo cookies.
12. Chill the cake for at least 30 minutes before serving to set the ganache.
