Puffed Cheese Quiche

Preheat the oven to 180°C (350°F). Spread the battered dough into a pie mold and poke the bottom with a fork.
Melt the butter in a saucepan over medium heat. Add flour and mix well to form a rug. Let cook for 1-2 minutes without letting color.
Add the milk little by little while constantly whipping to avoid lumps. Keep cooking until the sauce thickens.
Remove pan from fire and let sit slightly. Add sour cream, nutmeg, salt and pepper. Mix it up well.
Separate the egg whites from the egg yolks. Add the yolks to the sauce and mix well. Insert the shredded cheese.
Mount the egg whites on solid snow with a pinch of salt.
Gently incorporate snow whites into the cheese preparation by raising the mass so they don’t break.
Pour the preparation over the broken batter into the mold.
Bake for 30 to 35 minutes, or until the quiche is golden brown and well puffed.
Serve immediately, accompanied by a green salad.
