Assemble the cake:
Place the red velvet cake layer on a serving platter or cake stand. Spread a generous layer of cream cheese frosting over the top.
Spoon the strawberry filling over the icing, spreading evenly.
Place the second red velvet cake layer over the strawberry filling.
Place a thin layer of icing (crumb coat) over the cake to seal in the crumbs. Refrigerate the cake for 30 minutes.
After cooling, spread a second, thicker layer of cream cheese frosting over the entire cake, smoothing it out with an offset spatula.
