Steam the sweet potato cubes for about 15 minutes, until tender. Make your reservations.
In a bowl, whip eggs with milk, cream, flour, chemical yeast, nutmeg, salt and pepper.
Butter a clafouti mold or a gratin dish. Spread the sweet potato cubes and shredded goat cheese into the dish.
Pour the egg prep on top and sprinkle with fresh thyme.
Bake for about 30 to 35 minutes, until sponge is golden brown and well puffed.
Let cool for a few minutes before stripping and serving.
