Step 1: Prepare the Cake Base
1. Preheat the oven to 350°F (175°C). Grease and line the bottom of an 8-inch (20cm) springform pan.
2. In a medium bowl, sift together the flour, cocoa powder, baking powder, and salt.
3. In a large bowl, cream the butter and sugar together until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
4. Add the dry ingredients to the butter mixture alternately with milk, beginning and ending with the dry ingredients. Mix until just combined.
5. Pour the batter into the prepared pan and smooth the top. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.
Step 2: Make the Chocolate Mousse
1. Sprinkle the gelatin over the water in a small bowl and let it stand for 5 minutes to bloom.
2. For the dark chocolate mousse layer:
• In a heatproof bowl, melt the dark chocolate over a pot of simmering water. Let it cool slightly.
• In a small saucepan, gently heat half of the heavy cream until it just begins to simmer. Stir in half of the gelatin mixture until dissolved.
• Stir the warm cream mixture into the melted dark chocolate. Allow the mixture to cool to room temperature.
• Whip the remaining cream until soft peaks form. Fold the whipped cream into the chocolate mixture until smooth. Spread this mousse evenly over the cooled cake base.
3. Repeat the same steps for the milk chocolate mousse layer, using the milk chocolate and the remaining gelatin and cream.
Step 3: Add the Chocolate Glaze
1. In a heatproof bowl, combine the dark chocolate and heavy cream for the glaze. Melt together over a pot of simmering water until smooth.
2. Let the glaze cool slightly, then pour it over the mousse layer, allowing it to drip down the sides.
3. Refrigerate the cake for at least 4 hours, or until the mousse layers are set.
Step 4: Decorate and Serve
1. Carefully remove the cake from the springform pan.
2. Garnish with chocolate curls or shavings and fresh mint leaves.
3. Slice and enjoy this decadent chocolate creation!
