Pineapple Coconut Dream Cake!!!
– 1 teaspoon vanilla extract
– 1/2 cup sweetened shredded coconut
**For the Topping:**
– 1/2 cup toasted coconut flakes
– 1/4 cup crushed pineapple (optional, for garnish)
**Instructions**
**1. Prepare the Cake Batter:**
1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
4. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
5. Gradually add the dry ingredients to the wet mixture, alternating with the coconut milk, beginning and ending with the dry ingredients.
6. Fold in the crushed pineapple with its juice until just combined.
**2. Bake the Cake:**
1. Pour the batter into the prepared baking pan and spread evenly.
2. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
3. Let the cake cool completely in the pan on a wire rack.
